Thanks for pointing that out, Senechal! We do have tenbo sticks and I'd prefer to use them. However, we won't be using Junk Mats (we only have one) but green, square cork boards (we use them for club games - they're cheaper to get & work great):

There are no tenbo holders. When we play we just keep them in empty tile trays (if that's the correct word) in our laps or by our sides on chairs. I thought it'd be too awkward for a tournament... There's no room for sticks on table tops because they're 60x60cm which is JUST enough for playing comfortably.
We'd have to think of some attachable tenbo holders... or maybe use rubber bands to bind the sticks. They'd take up less space that way meaning no need for the trays. What do you think?

I think in this situation the best would be to put two stools at each table on opposite corners so that players can put tile racks with tenbo inside. Granted, it's not as convenient as the junk mat trays, but nothing is worst than counting with pen and paper in my opinion! The main problem is that it makes it hard to read the points of your opponents so you'd have to ask them but if counting with a paper you'd have to ask the person responsible for it anyway...

Please don't assign players to a specific table for several hanchans.
It gives them an unfair advantage, as it makes it easier and more long-term rewarding to memorize the tiles if they get stained or have manufacturing defects.

As for who goes to what table, I haven't found a good solution. You will have some threepeats of people playing at the same table no matter how you shuffle them.
